Advanced Choux Pastries

Description

A workshop designed for all the savvy bakers out there! Take your baking to the next level and come learn how to perfect your choux pastry desserts with techniques and recipes such as:

  • Craquelin: the crackle effect that makes cream puffs perfect
  • Filling cream puffs with pastry cream and whipped cream
  • St Honore cake (a classic French dessert): learn how to make creme chiboust and caramel and assemble it all into a beautiful St Honore cake using puff pastries

Participants will get to pipe and decorate their own pastries. Everything will be shared during the event. What you can’t eat, bring it home, along with printed recipes!

About the Instructor

Valentine (AKA Tartine of Tartine & Maple) is a French cook who’s passionate about cooking and baking. She teaches cooking classes, mostly French food and baking, in the Vancouver area! Trained in culinary skills from France, Valentine has worked for catering events in prestigious Champagne mansions and in various locations in Paris. Valentine is now an Uncommon Baker at the funky and eclectic “The Uncommon Cafe” in Vancouver. Tartine & Maple’s mission is to demystify French food and make it fun and accessible for all!
